How Meat Is Packed? More About Meat Packing Processes.

Food packaging goes beyond enclosing or wrapping a food product. It also protects the food from deterioration in a limited time. The process also ensures safe delivery of the product at the minimum cost. The cost of packaging must be reasonable. Packaging can not improve the existing quality of a product but it can maintain its quality during storage, transport and deterioration. 


TYPES OF PACKAGING MATERIALS

Meat packaging depends on the hardness, the packaging materials are of three types :

i) Flexible packaging materials : Plastic films, Paper, Aluminum foil.


ii) Semi-rigid packaging materials : Paperboard/cardboard/containers, PET

and PVC containers, Aluminum containers, Molded containers.


iii) Rigid packaging containers : Glass containers, Metal cans, Fiber board

containers, Wooden boxes/crates/barrels.


PACKAGING OF FRESH MEAT

For short time storage, most learned people like to wrap fresh meat in polyethylene pouches or bags. The polyethylene should be food grade, transparent and fairly thick. In developed countries, fresh meat chunks are packed in a rigid plastic tray and overwrapped with polyethylene.


Except for this popular film like polypropylene, polyvinylidene chloride or cellophane films can also be used for packing fresh meat in Dubai. This is another type of film called shrink film used for wrapping large and different shapes’ cuts of fresh meat and dressed poultry. The meat is first wrapped in shrink film which is then immersed in hot water (90°C) for a few moments.


When it is for long term storage, vacuum packaging of fresh meat and storage in the refrigerator is an ideal choice. Pork is never vacuum packaged due to its higher load of bacteria and it can be in good condition for only 2 weeks. The laminate for this packaging should possess a good strength and proper sealing.
